Unleavened Recipes

Beef Burritos

(serves four)

  • 4 unleavened tortillas
  • 1 lb. ground beef
  • 1-1/2 tsp. chili powder
  • 1 clove garlic (diced fine)
  • 1/2 medium onion (diced fine)
  • 1/4 cup sour cream
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup diced tomatoes
  • 1 cup shredded lettuce
  • salsa or Catalina dressing
  • 1 tsp. margarine
  • 1/2 cup sliced ripe (black) olives
  • 2 tbsp water

Sauté onions and garlic in margarine until onions appear translucent. Set aside. Brown ground beef and drain fat. Add onions and garlic to beef, sprinkle chili powder over mixture, add 2 tbsp water and black olives, stir, cover and simmer for 3 minutes. Warm tortillas in microwave with a damp paper towel on top of them for 30 -45 seconds until warm to touch. Place remaining ingredients on tortilla to taste, (Alex prefers Catalina dressing to salsa on his burritos) fold and eat.
