Unleavened Recipes

Corned Beef Pie

(a single-dish meal, serves four)

  • unleavened biscuit dough (for recipe click here)
  • 1 can chopped corned beef
  • 1-1/2 cups cooked mixed vegetables (corn, carrots, green peas, green beans)
  • 1/4 cup onions
  • 1/4 tsp. salt
  • 1/4 tsp. pepper
  • 1 tsp. margarine

Saute onions in margarine just until they begin to appear translucent. Place cooked vegetables in a 10” square or round glass baking dish. Spread corned beef evenly over veggies, add onions, salt and pepper. Cut out biscuits and place on top of the corned beef with sides touching to form a top crust. Bake in 425 degree oven for 8 minutes or until the biscuits are golden brown. Let stand a few minutes then serve.
